Don’t Crepe Your Pants Over This Healthy Snack

This afternoon classmate Cody Van Aken and I, Nolan Flashman, made a Healthy selection of Crepes for your everyday dinning requirements. This meal can be made for breakfast, lunch, dinner or dessert depending on what you are craving that day. Along with being healthy, it’s a quick make that is fun for you and your friends. Plus, it’s all made from scratch, besides the recipe. So, enough talking about it, here’s the recipe:

2 eggs

1 yolk

1 cup of eggs

4 tablespoons of melted butter

3/4 cup of flour

1 teaspoon of sugar

a pinch of salt

Now that you have the recipe go make some crepes of your own! Also, watch us demonstrate how to make it with our fun video right here.  http://www.youtube.com/watch?v=yYVP9-tJAhA . Enjoy!

You don’t need ramen in a bag!

Tonight I made ramen type soup. Its so much better then eating instant ramen from a bag or cup! It had fresh veggies and rice noodles. No freeze dried stuff here!

Here is whats in it (amounts vary on how many your are serving):

reduced sodium chicken stalk

snap peas

rice noodles

Bola-Bola is a classic soup dish of the Philippines. My mom and my grandma are in town for my graduation and we decided that this would be a good video to make. Soup is (almost) always good because as opposed to frying things, most of the nutrients remain within the dish. We used organic turkey and mostly organic vegetables from the local farmers market. My mom and my grandma used to make this for me whenever I was sick. In a way it’s kind of like chicken noodle soup.

Time: 30 minutes
Ingredients (in order of appearance):
-Garlic Salt (1 teaspoon) (Sodium: 2325 mg)
-Taro (5) (Calories: 116/Fat: 0/Carb: 28g/Protein: 2g)
-Onions (1) (Calories: 60/Fat: 0g/Carbs: 14g/Protein: 2g)
-Ground Turkey (1lb) (Calories: 776/Fat: 43g/Carbs: 0g/Protein: 90g)
-Eggs (2) (Calories: 347/Fat: 24g/Carbs: 2g/Protein: 30g)
-Black pepper (Calories: 5/Fat: 0g/Carbs: 1g/Protein: 0g)
-Breadcrumbs (1 cup) (Calories: 427/Fat: 6g/Carbs: 78g/Protein: 14g)
-Carrots (3) (Calories: 90/Fat: 0g/Carbs: 7g/Protein 1g)
-Eggplant (1 large) (Calories: 132/Fat 1g/Carbs: 32g/Protein: 6g)
-Zucchini (2) (Calories: 104/Fat: 2g/Carbs: 22g/Protein: 8g)
-Spinach (1 bag) (Calories: 65/Fat: 1g/Carbs: 10g/Protein: 8g)
-Lemon Juice (1/2 cup) (Calories: 30/Fat: 0/Carbs: 10g/Protein: 0)
-Green Onions (1 bundle) (Calories: 3/Fat: 0g/Carb: 1g/Protein: 0g)

Boil the water with garlic salt, taro and onions. Mix the ground turkey with the eggs, bread crumbs, and black pepper. Roll them into balls and then drop them into the soup. Chop the carrots, eggplant, and zucchini. Add the carrots and then the eggplant into the soup. The zucchini and spinach goes in near the very end. The final touch is the lemon juice with diced green onions. Enjoy!

Taco Salad/Main Dish

½ lb ground turkey $1:50

½ cup small Portobello mushrooms $.50

1 can of cooked beans $1

¼ cup sour cream $.35

Small avocado $.33

Taco salad seasoning envelop $1.50

Small bag of chips $1

Small head of lettuce $1

1medium tomato diced $.50

¼ onions $.50

1 jalapeno $.25

Peal and mash your avocado until the consistency is pasty, add salt and pepper to taste

Mix tomato, onion, garlic, jalapeno, cilantro, and about a teaspoon of olive oil and the juice of one lemon and salt and pepper to taste.

On plate put your lettuce as the base, and then add your meat and beans on top, than add salsa, avocado, sour cream and cheese then chips on the side.

Buen Provecho!
